Project Details

After catering to the refined tastes of Clapham for over 12 years it was decided the ESCA Restaurant was due for a revamp.

An existing deli offering cakes, pastries, hot food, salads and sandwiches would now provide something new introducing a bar and grill catering for breakfast, lunch and dinner and weekend brunch with amazing wines and cocktails and a menu based on a plethora of tastes and styles of cooking.

 

The back of house kitchen was redesigned for preparation, renewing fabrication and adding smokers to an existing cook line. A completely new wash-up area was also installed.

 

Front of house saw the introduction of a grill kitchen and bar.

This was largely made up of prime gas cooking with an impressive solid fuel grill being the centrepiece. Remote refrigeration counters with well organised drawer sections provide the cold storage for service.

Ventilation in both kitchens was a huge project on its own providing extract and supply air with a system designed carefully with the input of the client to achieve aesthetic expectations.

 

The Bar was completely bespoke providing no less than three cocktail stations including all of the required elements such as ice speed rails, ice chests, sinks and blender stations.
